Sausage Samosas

Country Sausage Pot PieServes: 4-8

Ingredients:
  • 1 tbsp oil
  • 2 tsp curry powder
  • ½ tsp salt
  • 2 cups refrigerated mashed potatoes
  • ½ tsp pepper
  • 10 oz frozen peas, thawed
  • 1 lb Swaggerty’s Sausage
  • 15 oz package refrigerated pie crusts
  • 1 medium onion, chopped
Preparation:
  1. Heat oil in large saucepan over medium heat.
  2. Add the onion and sausage. Drain.
  3. Add salt, pepper, and curry powder and cook, stirring 1 minute.
  4. Remove from heat and stir in the mashed potatoes and peas.
  5. Unroll the pie crusts and cut each into 6 triangles for a total of 12 triangles.
  6. Place a heaping tbsp of the potato mixture in the center of each triangle. Gather the corners of the dough and pinch to form a point. Pinch the seams to seal.
  7. Transfer to baking sheet and bake at 375 for about 20-25 minutes.
